To be crystal clear, 5G signals will be operating on several bands when it is all operational. At present it is ONLY operating up around the 3.4GHz band and only in some mainly urban areas.

Do you (or a very close neighbour) have any electrical equipment that comes on at 6.pm. This sounds a bit like a classic case of electrical interference.
The other possibility is we are talking about HD channels that are on COM7 which is on UHF C55. This UHF frequency can be prone to interference from HDMI cables if you have a DVR or other device that you turn on. Make sure your HDMI cables are well away from any aerial or flyleads, especially if those leads aren't high quality double screened coax.

It isn't just "weather conditions" that you may physically observe, it's "Tropospheric Ducting" that can occur under certain atmospheric conditions. Indeed there were some strong tropospheric conditions in different parts of the country Monday and Tuesday, and more predicted later in the week, but like weather forecasts, predictions can change.
The further you are from a transmitter (as well as how strong/weak the signals are) and the specific frequency will determine how likely interference from any distant transmitter (Europe or UK) might be at any given time.
If you are finding that this becomes a more frequent issue, (climate change isn't something anyone has direct control over) maybe best firstly to check your installation hasn't deteriorated in any way (aerial moved a bit, coax degraded, other objects in/on/around the loft or roof causing signal reception to be different), but then secondly to consider an improved aerial installation.
As you haven't provided a full postcode, I can't comment on the predicted reception at your location.

Hadn't experienced any myself, but not had time to go looking. I see there was a lot of tropo at the beginning of the week and more predicted towards the end of the week/weekend and predictions suggest some of it could be very strong. I note some regular dxers have been busy and some unusually strong dx on the I-o-W a few days ago!

It's extremely unwise to post your mobile number or address on a public forum as it may lead to crank calls or scams, a full postcode was all that was needed. No-one will respond to your mobile (this is an independent help site) as they won't wish to disclose their mobile number!
There is unfortunately a lot of "tropospheric ducting" around at present (see Effect of tropospheric ducting on Freeview | Help receiving TV and radio for a simplistic explanation). In the old black and white days we used to refer to "continental interference". Interference can come from Europe or UK transmitters and it doesn't always affect the same multiplexes or all of them at the same time and it can come and go.
You are not the only ones to be affected, it's affecting different parts of the country at varying times, but your area even has had a BBC report of reception being affected by "weather conditions". It's also likely to be continuing off and on for several days, although the predictions (like weather forecasts) can change.
Refusing to pay your TV Licence will have no effect on weather conditions or climate change!

Oh, I forgot to say that you shouldn't retune whilst you lose signal as you'll just end up with the correct tuning being lost and having to repeat a retune when signals are more stable.

As we are not the Broadcaster we can't answer the question directly but might it be programme dependant?

Do you have a Sky box or other Box of some description that has an (analogue perhaps) RF output that could be set to C31 so blocking the Freeview signal? If so tune it somewhere way above Freeview channels, say C60 or above.
Otherwsie, can you advise exactly what make and model your TV is please? It may be something peculiar to your TV.

The Bilsdale transmitter is currently listed for Planned Engineering, so the signals may be intermittent during the work.
