scott: Based on what I've found, you would appear to be best going for Heathfield. Obviously, this assumes no obstructions, such as buildings or trees, that might come into play.
There are six multiplexes post-switchover, and these are listed here:

The three PSB ("Public Service Broadcaster") multiplexes cover 98% of the population whereas the COM ("Commercial") ones, only 90%.
At your location, Heathfield would appear to be the only transmitter that will give you the full complement of Freeview channels (PSBs and COMs).
The Eastbourne relay, which is on the top of South Cliff Tower (receive aerials vertical), is a PSB-only transmitter. Digital UK lists Hastings as a possibility at your location, but doesn't give a prediction, something which I've observed for other Eastbourne post codes. However, Eastbourne's PSBs are co-channel with Hastings' COMs, so they are likely to be drowned out, meaning that Hastings is effectively PSB-only at your location (if indeed it is receivable). So Heathfield would appear to be the only transmitter to serve your location that provides the full service.
Assuming no local obstructions, you would appear to have line-of-sight with Heathfield, which is 14 miles away:

I imagine that a DM Log or Log 40 will do at your location (again, this carries the caveat that there are no local obstructions, which I don't know about).

w.stewart: The Commercial broadcasters that don't transmit from Balgownie are purely for profit. They choose where to site their transmitters and do so in order to provide the best return for themselves. Any such decision therefore does not take into account the "fairness" on those viewers whom they do not wish to serve.
The Commercial broadcasters achieve a 90% coverage from 81 of the largest transmitters largest by viewer population and for them to transmit from the 1,000 or so small "filler-in" transmitters, including Balgownie, would roughly double their transmission costs whilst only providing them with an additional 8.5% of the population.
They show adverts to viewers which they wish to aquire at lowest possible cost this being the simple law of capitalism. For this reason, it's not surprising that they don't wish to double their cost of transmission in order to increase their number of viewers by about 10%.

H B Kennedy: I don't think that you will be able to receive directly from Darvel, or any other full service transmitter for that matter.
The primary reason for this would appear to be that you are at the foot of Broom Hill which is around 100m high.
Taking The Hollybush Inn as the base location; whilst it does not have line-of-sight to Darvel, what with Whitehill being in the way, the drop isn't as near as is great at your location.
The only way you will be able to receive more channels is via satellite. As you already have a dish, you will just need a receiver, for example a Freesat one.

Note that ITV3 IS on Freesat, contrary to the presence of its logo on that page, denoting that it isn't.

Keith: It could be that the light is on, but there is no one home. The light simply indicates power is getting to the light.
Try connecting the incoming feed from the aerial to one of the room feeds and see if you get anything.

Alison: Because before switchover it time-shares with other services. This means that at other times another service effectively takes the place of Food Network.
Come switchover, the capacity increases and it is available 24 hours.

Jennifer Mather: Check that BBC is tuned to C60 for Beacon Hill/Budleigh Salterton and NOT C62 which is Dawlish or C26 which is Stockland Hill.
