As per previous posts here it's "Tropospheric Ducting" around causing interference, see Effect of tropospheric ducting on Freeview | RTIS for a simplistic explanation. It can be quite variable, come and go within seconds, minutes or hours. It has been particularly strong recently which can as you've discovered wipe out your reception. Climate change is likely to mean these sort of events could be more common.
Currently it may continue on and off for a day or two more.
It's best not to retune if you have no signal or badly pixellated signals as this can just clear correct tuning and you have to repeat the retune when conditions stabilise.

"We" don't do the maintenance as this is an independent help site. That said, Freeview have not currently listed Bilsdale for Planned Engineering.

Not all multiplexes can/will be affected or at the same time, It can be quite variable, come and go within seconds, minutes or hours. It has been particularly strong recently which can wipe out reception. Climate change is likely to mean these sort of events could be more common.

That information is incorrect.
As per my post on here page 14 on the 28th June, see Rebuilding Freeview High Definition from 2019 onwards | free and easy
COM7 is operational and working at Winter Hill and the other 24 main transmitters that transmit COM7 (subject to any listed Planned Engineering).
As you've mentioned Winter Hill I assume your normal reception is Winter Hill, if not please provide a full postcode.

You should be able to receive all the Caldbeck multiplexes without any issues.
It might be an idea to first check all you coax plugs, connectors etc. to make sure there aren't any broken connections. Poor connections can affect individual multiplexes and not others (due to something called standing waves - don't worry about the technical detail). You should get BBC Scotland at LCN9 in your EPG.
Really & Pick are on the ArqA/COM5 multiplex at LCNs 17 & 34 in your EPG. Sky Arts is now at LCN11.

There is the possibility that your TV's tuning section needs clearing, to do this unplug the aerial and carry out an automatic retune which should clear all previous tuning as nothing should be found. Plug the aerial back in and repeat the retune.
If that does not solve the problem, then check in your TV's tuning section which UHF channels for the multiplexes you are tuned to.
For Caldbeck Scotland they should be C27, C24, & C21 for BBCA/PSB1, D3&4/PSB2, & BBCB HD/PSB3.
For the main Caldbeck channels it's C25, C28, C22, C23, C26, C30 for PSBs1-3, COMs4-6 and a Local multiplex on C33 or C29 depending on location.
Also note that Caldbeck is currently listed for Planned Engineering with "Possible service interruptions".

Just to add to the above, Mendip is currently listed for Planned Engineering with "Possible weak signal" !
