Please provide a full post code so that we can see what your reception is predicted to be like.
You can check all the aerial cables and connections as far as you can safely reach. Please also check what the signal strengths are like on all the 8 multiplexes broadcast from Sutton Coldfield (your TV User Manual will tell you how to do that but do not retune).

In North London you should be getting excellent reception of all channels. Check what the signal strengths are for all the multiplexes and check that your aerial cables are in good condition, do not have water ingress and that all the connections are in good order and free from corrosion/oxidation.
If you provide a full post code we will be able to see what the predicted reception at you location is likely to be.

You are less than 8 miles from one opf the most powerful transmitters in the UK.So there is every chance that you have too much signal. Please check the signal strengths shown by your TV (the User Manual will tell you how to check that). It needs to be between 60% and 85%, any more will cause the symptoms you describe.

Your signal strength is too low! It needs to be between 60% and 85% for reliable reception. That you get BBC1 satisfactorily does not mean there is no problem with the aerial system. It is well known in the technical side of the trade that corrosion/oxidation of the contacts of any plug or socket in the system can cause frequency selective problems, such as loss of or por reception of some channels whilst others are fine. So please check all your aerial connections. Please could you also give your full post code so that we contributors can see what the expected recpetion conditions are like at your location.

You appear to be in a particularly difficult location, valleys are not helpful to TV reception especially is they do not enable sight of a transmitter directly. There are three possible transmitters around you, but all are 'hidden' by the valley. You've tried Stocjkland Hill and Mendip, the other is Huntshaw Cross - but that is to the west so again 'hidden' by the valley.
The only suggestion I have is to try raising your aerial as high as possible - but make sure it is safe. There is no guarantee that it will solve the problem though.
Aerials receive best in the direction of its main lobe to the front of the aerial, but they always have side lobes that can receive some signals - though usually not as well. That would explain what you are seeing with the aerial aimed in the general direction of SW - where there is no transmitter! It can only be a reflected signal which will be very variable and unreliable.
My brother lives in South Molton and gets good reception from Huntshaw Cross but he is not in a valley.

There are no such plans known publicly. The Idle transmitter is a relay of Emley Moor and is a 'Freeview Lite' service. What channels are transmitted from such transmitters is decided by the broadcasters on whether there is a commercial benefit to them to pay to transmit more channels. So you receive exactly what they have decided are viable for them to broadcast in that area.
