Looking at the Digital UK Coverage Checker for your location at www.digitaluk.co.uk/coveragechecker/main/trade/SS3+0DX/NA/0/blsliht3offhd8rtir3jaoc2f7 show that reception is variable for several of the multiplexes. Your alternative is to use Freesat rather than Freeview.

The frequencies used for 4G are far too far away from those used by the Winter Hill transmitter to be the cause of interference. It may do so if the wanted TV channels were mainly in the region of channels in the high 50's or above.Despite fears that it would cause a lot of problems, very few people have been troubled by 4G interference.

It was because of the closeness of the 4G transmitter. In the case under consideration, there is no such transmitter close by, so not a problem.

Depending on where in Europe you intend to travel an 80cm dish would be the absolute minimum but you may find a much larger one is needed further South and/or East, areas where the UK footprint either gives poor coverage or none at all. You may in that case need asutable portable mounting assembly. There is no guarantee that any signals from the UK beams will be available as they are deliberately aimed at the UK. Other beams would be available but not carrying UK programming

A good quality Low Noise Block is needed with two outputs at least.

You have explained it yourself. High pressure causes numerous recepotion problenms and often affected just some channels and not others. As it is a perfectly natural phenomenon there is noth anybody can do about it. It has been known about the many decades.
