Gabrielle: You aren't paying Sky for a free channel (your Sky box receives its channels from satellite and has nothing to do with Freeview). Sky only make the recording/playback functions available to paying subscribers, it make no difference whether you're trying to record a free channel or a subscription channel.

I would love to watch a programme I missed on the 25th September at 11pm. Called How It's Made and it is about how to they keep the money in ATM Machines safe. Would I be able to watch this programme?

Quest do not provide a catch-up service but they are on their owner's streaming service Discovery+.
The programme you want was actually called "How do they do it?" and was actually on at 1130pm and is S11/Ep11.{How it's Made is a different series}.
Whilst the Freeview channels can be streamed live on Discovery+, catch-up services are subscription.
The programme you want is available on Discovery+ and also on Amazon Prime if you have it.
I'm sure it will get repeated, it was first screened in 2014, but when and where I've not discovered so far!
