Apologies, one of us should have said try clearing all previous tuning by doing an automatic scan with the aerial unplugged. Then with the aerial plugged in either do an automatic scan if that works ok for your locale, or a manual scan of each multiplexes' UHF channel.

Does the Digitaluk checker show any predicted reception of the Local Mux at your location Mike?
If so, perhaps (not surprisingly) it's not as accurate as one might hope!

Premier Sports is not available on Freeveiw, only Sky & Virgin. It does have a sister channel called Freesports and is LCN 64 in the channel list, it's on the COM8 multiplex which is broadcast from Wenvoe if you can get it at your location. Put your postcode into Digital UK - Coverage checker to check predicted reception at your location.

As has been posted many time on various pages around this site, unfortunately the site owner has not had time to bring the details of circa 1000 transmitters fully up-to-date, this has been compounded by some bugs in the scripts which mean many transmitter pages are showing the final channel locations when the 700Mhz clearance hasn't yet been completed.
Changes for Dover (retune events) are currently scheduled to take place on the 22nd August & 16th October.
Put your postcode into Digital UK - Coverage checker to see the predicted coverage at your location & any upcoming retune events or reception changes.
Digital UK | Channel listings is generally up-to-date (but not today!)
Service Updates | Freeview is often worth keeping an eye on even if the information isn't always well explained.

It is most likely that your problems are being caused by the current weather & propagation conditions resulting in interference from other transmitters (UK & Europe). DON'T retune as you may lose channels and have to retune again when conditions stabilise.

Firstly, RT in SD is at LCN 234 transmitted on the ArqB multiplex, RT in HD is LCN 113 transmitted on the COM7 (HD) multiplex. See Digital UK | Channel listings
Secondly, put your postcode(s) into Digital UK - Coverage checker to see what transmitters you might receive and the predicted reception at each.
You've mentioned Hollington Park and Bexhill, both of these are Freeview Light transmitters and only broadcast the 3 PSB multiplexes - you won't get RT from them.
None of the suggested transmitters have COMs 7&8 multiplexes and any reception of them may be from a more distant transmitter (if the aerial is horizontal) and reception would most likely be very unreliable.
At your first location, by Bohemia mast, I assume you mean Hastings.
Predicted reception Coverage Checker - Detailed View shows equally good reception from Heathfield or Hastings (& reception not as good from Hollington park) they are all in slightly different directions.
Heathfield requires a Group B (or T or Wideband) aerial in Horizontal Polarisation and Hastings requires a Group A (or T or Wideband) aerial in Vertical Polarisation.
At your second location, predicted reception Coverage Checker - Detailed View is good (but different for the PSB & COM multiplexes) from both Heathfield and Hastings. There's poor reception from Bexhill. Here they are in quite different directions. On balance Heathfield is slightly better overall.
I would suggest in both case, first decide which transmitter you are going to receive depending on your aerial etc. and then do an automatic tune with the aerial Unplugged to clear all previous tuning.
Then do a manual tune for each multiplex's UHF channel to ensure you are getting the correct signals. Automatic tuning could end up with some of them from the wrong transmitter and so unsatisfactory reception considering the aerial requirements.

Well I'm glad I don't live at any of those postcodes, putting each into Digitaluk's coverage checker at Digital UK - Coverage checker shows that none get ideal reception from the local transmitters and Carhampton is only a "Light" transmitter, not predicted to be receivable at your 3rd postcode.
I'm wondering if the primary cause at this time is the current tropospheric propagation as you have signal but no quality. There's some not too distant Welsh repeaters using the same UHF channels as Carhampton IIRC without looking.
PS. btw any connection with UKCR?

I'm afraid current weather/propagation conditions mean that signals from other transmitters travel further and cause interference. If you have all the channels (LCNs) present in your list, then you'll need patience until conditions settle down.
If you are missing complete multiplexes, then try a manual tune for their UHF channel which you may have to do when conditions are more stable. Sometimes (depends on set) you may have to clear ALL previous tuning before doing retunes/manual tunes to get everything satisfactorily, do the clearing by an automatic scan with the aerial unplugged. HTH.
